Friday Inspiration
I've heard somewhere that doing one small task first thing in the morning will get the day off to a good start. I came across this quote the other day, and it struck me equally as important.
Something as small as dirty dishes in my sink meant I had plenty of good food to eat.

Apple Crunch Pie
{Apple Crunch Pie}
Just found this recipe in a Woman's Day Magazine, 2004. I just love the crunchie topping on this apple pie.
Recipe:
Make 1 bottom pie crust for 9'' pie (mine was homemade but the recipe recommends buying a store bought crust)
Crumb topping:
1/2 C plus 2 T flour
1/2 C packed brown sugar
1/3 C white sugar
1 tsp. cinnamon
1 stick butter, cold, cut into small pieces
Filling:
7 medium to large apples
1 T lemon juice
1/2 C white sugar
3 T flour
1/2 tsp. cinnamon
1/8 tsp. nutmeg
Topping: Mix flour, sugars, and cinnamon, cut in butter with a pastry blender until mixture forms moist, coarse, crumbs that clump together easily.
Filling: Peel, quarter and core apples. Cut in 1/8'' thick slices. Put into a large bowl and toss with lemon juice to coat. Mix remaining ingredients in a small bowl, sprinkle over apple slices, toss to coat.
Layer apple slices in pie shell, pat topping over apples to form a top crust.
Place pie in 450 degree oven for 15 min. then reduce oven to 350 degrees and bake 45 min., topping should be brown. Serve alone or with ice cream while warm.

Things are starting to cool down here in the Midwest. We're enjoying the crisp fresh air with windows opened and the air-conditioning turned off. We decided to add a new cookie cutter into the mix since our seafood ones have taken off. Now you can pick up a pig shaped cookie cutter to make desserts to go along with our BBQ bibs.

Coffee Mocha Frappe
{Coffee Mocha Frappe}
I took about 3 recipes and combined some ingredients until I came up with a mixture I liked. Tastes much like the coffee mocha frappes you get at coffee shops. A great drink for a pick me up in the afternoon. Recipe:
Fill a glass 1/2 way with milk. (I used a 16 oz. glass)
Add 2 t. instant coffee
2 T. chocolate syrup
1/4 C of sugar and stir.
Add crushed coffee ice cubes. (I made mine with left over coffee and used my ice crusher to crush them)
Add a couple of dips of vanilla ice cream
Add whip cream on top with sprinkles and a little more chocolate syrup.
